Healthy Chili - Serves 4

Ingredients:

450g lean minced beef or quorn, 1 tablespoon tomato puree, a tin of chopped tomatoes, a tin of kidney beans, 1 large onion chopped and finely diced, 1 tablespoon light olive oil, pouch of oxo beef stock, salt and pepper, a teaspoon chilli flakes (you can add more if you like it hot)

Method:

Heat up olive oil add chopped onion, minced beef or minced quorn, tomato puree, beef stock, chilli flakes. Simmer for 30 mins before adding kidney beans. Simmer for a further 30 mins. Serve with wholegrain rice or sweet baked potato

Karachi Chicken - Serves 2

Ingredients:

1 Large onion, finely chopped, 1 teaspoon cumin seeds, 2 tablespoons light olive oil, 1 Large green pepper, sliced, 1 Teaspoon salt, 1 Teaspoon red chilli powder, 3/4 teaspoon turmeric, 1/2 teaspoon curry powder,Teaspoon Tomato Purée, 200 ml warm water,1 1/2 fresh tomatoes, chopped, 1/2 tablespoon ginger paste, 1/2 tablespoon garlic paste, 2 chicken breasts, cut into bite sized pieces, pinch dried Fenugreek leaves, fresh Coriander and Garam masala, 1 fresh tomato cut into wedges

Method:

Heat the oil in a large wok. Add the onion and cumin seeds and fry gently until the onions are golden brown. Add 4 tablespoons of water and then add the sliced green pepper to the pan and cook until soft. Add the ginger and garlic paste, salt, red chilli, turmeric, curry powder, tomato purée and chopped tomato, stirring frequently. If you feel the mixture is sticking to the pan, a drop of water can be added. Once the tomatoes have dissolved, add the chicken and stir into the mixture. Keep stirring for about 3 minutes. Add the warm water and stir. Reduce the heat and stir regularly until the chicken is cooked. Add the fenugreek, coriander and Garam masala. Stir and cook for a further 1-2 minutes. Stir in the tomato wedges and serve with wholegrain rice.
